Crew Member Job Description

  • Hosts work directly with the guests, take reservations and assist other staff members as needed.
  • Cocktail Servers, Bartenders and Dining Room Servers work directly with guests and must be 21 years of age or older. Strong communications skills, friendly personality and a desire to please the guest are required. Prior experience in a restaurant serving alcohol, wine and beer required.
  • Prep Staff prepare food for use on the cook’s line. Ability to read and follow a recipe is a must. Prior experience very helpful.
  • Kitchen Staff prepare the food to the high quality standards of the company. Ability to read and follow recipes is required along with an ability to maintain high quality production in a busy environment.
  • Bussers/Food Runners and Dishwashers support the restaurant by maintaining a clean environment and following sanitation requirements. These jobs require high energy.

Minimum Requirements for Crew Member Positions

1. 16 or older depending on position
2. 21 or older for Bartender, Cocktail Server or Dining Room Server
3. Work permit may be required by state law or local ordinance
4. Weekend availability may be required

Sherri Abruscato

My first job was with Portillo’s in 1969 as a teenager in high school working at the new Glendale Heights location. Dan & Glenda Knippen were the store managers. As the company grew so did the opportunity for more responsibility and advancement. In a couple of years I had moved from part-time accounting and payroll to a full-time administrative assistant position for a much needed operations department. By mid 1990’s I was the Operations Manager and assumed the responsibility of new construction coordination. Today, I proudly represent the position of Chief Operating Officer and truly enjoy working on the daily challenges with all departments in all facets of the company operations. Mr. Portillo has a passion for his company that flows through to all levels of management pushing us to continually set the bar to higher expectations and instilling a great sense of pride.
