Portillo’s General Manager Erin Wargo has been with Portillo’s since 2018, when we opened our restaurant in Normal, IL. Erin was already a fan of our bun-believable food when she was hired on as a team member, but it was our values of Family, Fun, Greatness and Energy that kept her motivated to stay and grow her career at Portillo’s.

How long have you been with Portillo’s and what made you come work for us?
I will have been with Portillo’s for 4 years this coming March! I was always a fan of Portillo’s and the Normal location (#48) had just opened, and I decided to join the team. Plus I was looking for something new and challenging.
What do you love about Portillo’s?
Everything. I feel very connected to the Portillo’s values—if you’ve met me, you know I especially exemplify “Family” and “Fun”! I’ve met amazing people along the way. And of course, our food.
What was your first position here and what position did you get promoted to?
I was hired as a team member and climbed the Portillo’s ladder up to crew chief , restaurant manager, assistant general manager, and now, I’m currently the general manager of our bun-believable restaurant in Springfield!
What do you love about your position?
I love helping others grow.
What advice would you give to someone at Portillo’s looking to move up?
Stay focused, work hard, and most importantly, have fun!
